Chicken Tikka Masala

Ingredients

For the Marinade

  • 700 g boneless chicken (thigh or breast)
  • ½ cup plain yogurt
  • 1 tbsp lemon juice
  • 1 tbsp ginger-garlic paste
  • 2 tbsp Tikka Masala spice blend
  • Salt to taste

For the Masala Sauce

  • 2 tbsp oil or butter
  • 1 medium onion, finely chopped
  • 1 cup tomato purée
  • 1½ tbsp Tikka Masala spice blend
  • ½ cup cream (or coconut cream)
  • 1 tsp sugar (optional)
  • Salt to taste

Instructions

  1. Marinate the protein
    In a bowl, combine yogurt, lemon juice, ginger-garlic paste, spice blend, and salt. Add chicken and mix well. Marinate for at least 20 minutes.
  2. Cook the chicken
    Grill, bake, or pan-sear the marinated chicken until lightly charred and just cooked through. Set aside.
  3. Prepare the masala base
    Heat oil or butter in a pan. Sauté onions until soft and lightly golden. Add tomato purée and spice blend. Simmer for 5–7 minutes, stirring occasionally.
  4. Combine and simmer
    Add cooked chicken to the sauce along with cream. Simmer for 8–10 minutes until the flavours come together.
  5. Finish and serve
    Adjust seasoning. Serve hot with naan, roti, or basmati rice.

Protein Variations

This recipe works well with a variety of proteins:

Paneer (Vegetarian)
Replace chicken with 400–500 g paneer cubes. Lightly pan-fry before adding to the sauce for best texture.

Lamb or Goat
Use 700 g diced lamb or goat. Cook longer until tender before adding to the masala base.

Plant-Based Options
Tofu, chickpeas, or mixed vegetables can be used. Replace cream with coconut cream for a vegan version.
